VENISON — Deer meat. This is the word derived from Latin 'venatio' (hunting). All deer species produce venison: whitetail, mule deer, blacktail, Coues whitetail. The backstrap (loin) is the prized cut, comparable to beef ribeye or tenderloin. Ground venison replaces beef in nearly every recipe. Key: venison is very lean — avoid overcooking above medium.

ELK — Elk meat is simply called elk (or sometimes wapiti). Slightly sweeter and milder than venison, with a rich, nutty quality. Among the finest wild game meats in North America. Tenderloin and loin steaks need nothing more than salt, pepper, and butter. Ground elk makes exceptional burgers and chili.

BEAR MEAT — Black bear meat is simply called bear. When the bear has been eating berries and mast crops, it's exceptional — rich, sweet, similar to pork. Must be cooked to 160°F internal temperature throughout due to trichinosis risk. Bear fat renders beautifully for cooking — save it.

WILD TURKEY — Wild turkey breast and legs. Significantly leaner and more flavorful than domestic turkey. Best preparation: buttermilk brine the breast, pound thin, and fry in cast iron. Turkey legs require long braising to become tender.

DUCK/WATERFOWL — Wild duck meat. Mallard and teal are the best-eating ducks. Seared breast at medium-rare is extraordinary. Divers (scaup, bluebill) have stronger flavor and benefit from soaking in cold salted water.

THE CUTS: Backstrap (loin along the spine), Tenderloin (inner loin, most tender), Hindquarter (steaks and roasts), Shoulder (stew and roast), Neck (ground or slow-cook), Heart (pan-fried, highly prized), Liver (fried with onions — hunter's delicacy).
