    IMPORTANT: Bear meat must reach an internal temperature of 160°F (71°C) throughout to eliminate trichinosis risk. Use a reliable meat thermometer.

    Combine apple juice, brown sugar, vinegar, mustard, garlic, and paprika for marinade. Marinate bear roast in refrigerator overnight (8–24 hours minimum).

    Preheat oven to 300°F (149°C). Remove roast from marinade, reserving liquid.

    Season all over with salt and pepper. Sear in Dutch oven with oil on all sides over high heat — 4 minutes per side.
